Green bean, blood orange and radicchio

Ingredients
  • 200g fine green beans 
  • 2 blood oranges
  • 1 head of radicchio, torn
  • 30g lovage, chopped 
  • 20g mint, torn   
  • 50g flat leaf parsley, roughly chopped
  • 50ml olive oil 
  • 30ml aged vinegar (try to find Wild Wood)  

Bring a pan of lightly salted water to the boil. Add the beans and cook for two to three minutes. Peel the blood oranges and cut them into segments.

Toss the beans, oranges and all the other ingredients together in a large bowl. Serve as soon as possible.
