Spaghetti Amatriciana

Ingredients
  • 160g dried spaghetti
  • 1tbs vegetable oil
  • 150g thick cut bacon lardons
  • 1 garlic clove, crushed
  • ½tsp chilli flakes
  • 1tbs tomato paste
  • 200g tin high quality tomato sauce
  • Sea salt
  • Black pepper
  • 30g Parmesan cheese
  • Fresh basil leaves
  1. Bring a large pot of water to the boil and season with sea salt. Add the spaghetti and cook for 8-10 minutes.
  2. While the spaghetti is cooking, heat a medium-sized pan and add a tablespoon of vegetable oil. Add the bacon lardons and cook for 3-4 minutes until browned, stirring regularly. Add the garlic and chilli flakes and cook for one minute, then add the tomato paste, tomato sauce and a ladle of pasta water, bringing to a simmer and stirring to combine. Season with salt and pepper.
  3. Strain the spaghetti and add it to the pan, stirring it through and coating it with the sauce. Serve on a plate and finish with grated Parmesan cheese and fresh basil leaves.
