Chicken gyros with tzatziki

Ingredients
  • 2 onions
  • Salt and black pepper
  • 1tsp chopped fresh or dried oregano
  • 1tsp smoked sweet paprika
  • 1tsp honey
  • 2tbsp olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, crushed
  • 4-6 chicken breasts
  • To serve: Tzatziki, salad, flatbreads, chips or cubed roast potatoes
  1. Preheat the oven to 180 degrees. Half one onion and set it aside. Finely slice the other onion and place it in a mixing bowl with the remaining marinade ingredients. Mix well. Add the chicken breasts and ensure they are evenly coated in the spice mixture.
  2. Stack the chicken breasts on top of one another, along with the sliced onions, and secure with two skewers, one at each end. Finish with half an onion on each skewer. Stand the skewers up on a tray, cut side of the onion facing downwards, providing stability and flavour for this gyros tower.
  3. Bake for 60 minutes, basting every 20 minutes. Check that it is cooked all the way through after 60 minutes; it might take a bit longer depending on how many breasts you use and their size. Once the meat is cooked, slice it and mix with the onion and cooking juices. Serve with warm flatbreads, tzatziki and salad.
