Brown butter roasted cauliflower, almonds, Gorgonzola, raisin dressing

Ingredients
  • 3tbs butter
  • 1 large cauliflower, chopped into pieces
  • 1tbs balsamic vinegar
  • 1tbs water
  • Salt and pepper
  • 100g smoked almonds
  • 100g golden raisins
  • 1tbs sherry vinegar
  • 1tbs extra virgin olive oil
  • 1tsp whole grain mustard
  • 1 shallot, very finely diced
  • 2tbs mixed leaves
  • 250g Gorgonzola

1. In an ovenproof pan, heat the butter and add the cauliflower. Cook until golden brown and then add the vinegar and reduce for 20 seconds.

2. Add the water, season with salt and pepper and cook in the oven at 180 degrees for 20 minutes. Remove from the oven and add the almonds to the pan.

3. In a bowl, mix the raisins, sherry vinegar, olive oil, mustard, and shallot and allow to sit for 10 minutes before serving. Pour the dressing over the cauliflower and add the Gorgonzola. Garnish with the mixed leaves and season with salt and pepper.
