Tomato and Spring Onion Miso Salsa

Ingredients
  • (serves 4 as accompaniment)
  • 1 punnet cherry tomatoes, quartered
  • 1 red onion, finely diced
  • 1 tbsp miso
  • good splash olive oil
  • 1 bunch spring onions, chopped

In a bowl, gently mix the miso and olive oil together until you get something dressing-like in consistency.

Then add in the chopped tomatoes, onion and spring onions. Toss well to mix together and serve.
