Raw tracker bars

Ingredients
  • 400g of a smooth good quality peanut or cashew butter
  • 150g nibbed almonds
  • 100g destoned and chopped medjool dates
  • 100g chopped figs
  • 45g organic coconut oil melted
  • 200g desiccated coconut
  • 400g rolled oats
  • 50g raisins
  • 200mls coconut water
  • 60g agave syrup
  • 150g of mixed seeds of your choice e.g. chia, linseed, sunflower, sesame, pumpkin

Combine the peanut butter with coconut water and oil to a smooth paste, fold in the dry ingredients until mixed through.

Line a flat tray with some parchment paper and spread the mix evenly, put another piece of parchment on top and press with a rolling pin. Let it set in the fridge overnight.

When set, cut into small bars and keep in an air-tight container up to two weeks.
