Quinoa cakes

Ingredients

  • 200g quinoa
  • 1/2 head cauliflower
  • 1 bunch spring onions, finely sliced
  • 2 cloves garlic, peeled and crushed
  • 4 eggs, beaten
  • 200g pack feta cheese, crumbled
  • 50g raisins, chopped
  • 1 large bunch coriander or flat leaf parsley, chopped
  • 80g rolled oats
  • Salt and pepper
  • Olive oil

Cook the quinoa in boiling water for 15 minutes, by simmering gently. Drain and let it cool down and continue draining. You could also do this the day before. Put the cauliflower in a food processor and mix on pulse until it resembles fine breadcrumbs. Add it to the quinoa and add the rest of the other ingredients (except the olive oil) and mix really well. Shape into 12 patties and put on a baking tray or similar and chill in the fridge for at least 30 minutes. Again, you could leave them overnight. To cook, preheat your oven to 180 degrees/gas 4. Fry them in batches in the olive oil until golden brown on both sides and then transfer to a baking tray and cook for another 10 minutes in the oven.
