One-pan sausage and tomato gnocchi

Ingredients
  • 2tbs olive oil
  • 500g gnocchi
  • 250g cherry tomatoes
  • 360g sausages
  • 2tbs whole olives
  • 250g baby mozzarella (drained weight)
  • Small bunch of basil leaves

1 Preheat the oven to 200 degrees. Tip the mozzarella into a sieve over the sink and leave to drain well. Drizzle a large tray with olive oil. Tip all the gnocchi on to the pan. Add the tomatoes and mix well to coat in the oil.

2 Remove the casings from the sausages. Divide each sausage into four and roll each piece into balls. Add to the tray. Place the tray in the oven and bake for 15-20 minutes, turning everything halfway through.

3 Once cooked, leave the dish to rest for a minute before scattering the olives, mozzarella and basil leaves on top. Serve right away.
